The standard menu is the “Gyu-tongue set meal,” which offers a set of thickly sliced grilled beef tongue, barley rice, tail soup, pickles, and miso nanban. Recently, it has become possible to eat beef tongue grilled in places other than Sendai.

Gyu tongue yaki (grilled beef tongue) was created 70 years ago by a Sendai chef be inspired by French tan stew, and has become famous for being delicious for about 30 years. In Sendai, there are about 100 restaurants specializing in beef tongue grilling. In addition to Sendai, there are beef tongue specialty restaurants all over Japan, and you can usually find “beef tongue” on the menu of yakiniku restaurants.
Gyu tongue yaki is served by salting thickly sliced beef tongue, grilling it over charcoal, and sprinkling lemon juice on the grilled beef tongue. Sometimes miso sauce is used, but most are salty.
In addition, at beef tongue specialty restaurants, it is generally offered as a “beef tongue set meal” in combination with the following dishes;
- Mugimeshi: Rice cooked by mixing barley with rice.
- Tail soup: Boiled beef tail with salt and chopped green onions.
- Quick pickled vegetable: Chinese cabbage, cabbage, cucumber are pickled in salt or seasoning liquid.
